I held certain truths to be self-evident; after all they had \u200ebeen ingrained deeply from early on. These \u201ctruths\u201d were often hard \u200eto shake.<\/h2>\n<p dir=\"ltr\">Take milk, for example: as a child and later as a teenager, \u200eI drank milk and lots of it. Milk is healthy: to be drunk at almost every \u200emeal! Should I crave a snack, the cookie or other sweet would more \u200ethan likely be accompanied with a glass of milk. After all, a snack \u200ewithout a glass of milk is not a snack at all! \u200e<\/p>\n<p dir=\"ltr\">I was but nineteen years old when I left my parents\u2019 home and \u200euprooted to Israel. I moved to a kibbutz. At that time, the only milk to \u200ebe had was taken directly from the \u200edairy: unpasteurized and unhomogenized! Yuck, not for me! From that \u200emoment on, my consumption of milk plummeted!\u200e<\/p>\n<p dir=\"ltr\">Several years passed and I was a mother. I knew (certain truths are \u200eself-evident, right?) that it was of the utmost importance that my \u200echildren should drink milk and drink milk they did! Milk is healthy, \u200eperiod! I made sure that my children would grow to be \u201cbig and \u200estrong\u201d: they drank milk and lots of it! \u200eOf late, this \u201ctruth\u201d is no longer self-evident.<\/p>\n<h2 dir=\"ltr\">It would appear that \u200ewhat is healthy for calves is not beneficial in the least for us!\u200e<\/h2>\n<p dir=\"ltr\">Epidemiological studies, such as the joint study done by American and \u200eChinese scientists in China (the book, The China Study, is highly, highly \u200erecommended reading), show that, paradoxically, in those regions with \u200ethe highest consumption of dairy products there have been found the \u200ehighest rates of fractures and osteoporosis \u00b9.\u200e<\/p>\n<p dir=\"ltr\">Milk is acidic on the PH scale. Ironically, the body releases calcium \u200efrom its bones in an effort to neutralize this acidity \u00b2!\u200e<\/p>\n<p dir=\"ltr\">Yet newer research is providing disturbing evidence that the \u200eintroduction of dairy to infants may very well increase the likelihood \u200eof the development of Type 1 Diabetes later down the line\u00b3.\u200e<\/p>\n<p dir=\"ltr\">The last thing that I want to do is get on my soapbox and preach! I \u200eloathe extremism in all of its forms and directions. I would, however, \u200elike to suggest that not everything we \u201cknow\u201d to be true is actually \u200ethat. Things that once were true have been discovered to be \u200eerroneous. Not every truth which we \u201cinherited\u201d from our parents is \u200eso. I would venture to propose that we be open to ideas that seem to \u200ebe untruths and at times illusory. Let us be wise enough to ask the \u200eright questions. Who is the source of this information? Is he \u200eaccredited? Who or what is behind him? Does he have a specific \u200eagenda?\u200e<\/p>\n<p dir=\"ltr\">The next time that someone asks you to \u201cMilk Your Diet\u201d ask yourself \u200ejust what is that person trying to sell you?!\u200e<\/p>\n<h2 dir=\"ltr\">\u200e\u200e\u200e\u200eMilk?!\u200f<\/h2>\n<p dir=\"ltr\">Today there are many, many alternatives. May I suggest trying \u200eyour hand at making Hazelnut Milk? It is really delicious! Nut milk can \u200ebe easily made in your own home and can be made from almost any \u200ekind of nut. It is easy! Here is how:\u200e<\/p>\n<p dir=\"ltr\">Soak nuts in warm water overnight<br \/>\nRinse the nuts in fresh water<br \/>\nFor each cup of nuts add three cups of water and blend<\/p>\n<p dir=\"ltr\">Strain the blended nuts in a fine strainer (they can be dried and used \u200efor baking) and separate the milk from the pulverized nuts<\/p>\n<p dir=\"ltr\">Return the strained \u201cmilk\u201d to the blender and add:\u200e<br \/>\nA pinch of salt<br \/>\nOne soaked date<br \/>\n\u200e\u00bd teaspoon of vanilla<br \/>\nA pinch of nutmeg<\/p>\n<p dir=\"ltr\">Blend and Enjoy!
