Warmer, brighter, the chirpy days of May call us out. A \u200ewonderful time for reconnecting with nature, what could be better than a scenic \u200epicnic lunch?! There is no need to fire up the barbecue or roast some more snacks \u200eover the bonfire. Spring, Summer, it\u2019s time for Salad with a capital \u201cS\u201d! There ain\u2019t \u200enothing better than a cool crisp salad bar spread! Yeehah! \u200e<\/p>\n<p dir=\"ltr\">This is the time to bring out the vibrant colors of spring in all their glory. Ever since \u200eI can remember, nothing could please me more than a festive abundant spread of \u200esalads. I embrace my creative nature and thank <a href=\"http:\/\/hbne.co.il\/?p=1625\" target=\"_blank\" rel=\"noopener noreferrer\">Tziona<\/a>\u00a0again and again for \u200ethe culinary creativity which she sparked within me.\u200e<\/p>\n<p dir=\"ltr\">On weekends and holidays, more often than not, you\u2019ll find me playing in the \u200ekitchen, crafting my crazy concoctions.<\/p>\n<p dir=\"ltr\">Not everything goes, if you must know, \u200eeven I have my guidelines.\u200e..<\/p>\n<h3 dir=\"ltr\">My moto: more healthy, fresh and crunchy choices; less oils, less sweeteners.<\/h3>\n<h3 dir=\"ltr\">Must not forget: don\u2019t kill the vegetables; never suck the life out of your \u200eproduce! Less cooking translates into more nutrients. Give your digestive enzymes \u200ea break: when they live, <a href=\"http:\/\/hbne.co.il\/?p=444\" target=\"_blank\" rel=\"noopener noreferrer\">you live better!<\/a>\u200e<\/h3>\n<p dir=\"ltr\">If I must bring my pen and notebook to the playground, it spoils all the fun. I \u200eapologize for my imprecise notations. Tziona, I will forever be in your debt. Or like \u200emy friend Christine says: \u201c<a href=\"https:\/\/www.facebook.com\/groups\/1711132759163306\/\" target=\"_blank\" rel=\"noopener noreferrer\">It\u2019s ok to be not ok!<\/a>\u201d<\/p>\n<p dir=\"ltr\">Some dishes do require \u200eprecise measurements, but salad preparation is usually a worry free zone. \u200e<\/p>\n<p dir=\"ltr\">To begin my playdate I usually choose a theme, a vegetable or two and a spice, \u200eand \u201cwork\u201d from there. More often than not I will google my ideas and see what \u200eothers have done. I return to my pantry and refrigerator and begin to pull out my \u200e\u200e\u201cgame\u201d.\u200e<\/p>\n<h2 dir=\"ltr\">Cauliflower<\/h2>\n<p dir=\"ltr\">Today\u2019s theme was cauliflower. I did not want to cook it and was searching for a \u200edifferent way to cut it. In the past I\u2019ve used the S shaped chopping blade to make \u200esalads, pizza dough and <a href=\"http:\/\/hbne.co.il\/?p=2838\" target=\"_blank\" rel=\"noopener noreferrer\">cauliflower matzah balls<\/a>. While surfing the web I \u200ediscovered that others had used the large shredding blade to prepare a fresh \u200ecauliflower salad. Use the large shredding blade and I guarantee you\u2019ll love the \u200eresults.\u200e<\/p>\n<p dir=\"ltr\">To prepare quinoa, soak it overnight. Afterwards rinse well and cook like pasta in \u200ean abundant amount of boiling water. Don\u2019t cook for more than 5 minutes. The \u200equinoa should be a little crunchy, never sticky. Use a rice strainer to drain. I \u200eprepare an abundant amount and store the remaining cooked and unsalted quinoa in \u200ethe refrigerator. It can be used for the next few days in other salads. It is also a \u200ewonderful addition to soup (add cold to your soup bowl and then pour hot soup on \u200etop).\u200e<\/p>\n<p dir=\"ltr\">Asparagus is packed with vitamins, minerals and antioxidants. It can be grated on a \u200emandolina and used fresh. I\u2019ve done that before but today I wanted to save \u200eworktime. I opted to steam the greens as this way the vegetable is not immersed in \u200ewater or oil. I used my trusty two story (three pieces) bamboo steamer basket. Cut \u200ethe asparagus stalk and \u201cflower\u201d on the diagonal into bite sized pieces. Choose to \u200eput the thicker stalks on the bottom basket and the \u201cflowers\u201d on the top basket. \u200ePlace the set of baskets over a pot of boiling water and steam for about 7 minutes. \u200eDo not overcook! The asparagus should be crunchy, never mushy. Add cooked \u200easparagus to an ice bath to cool. When cool, strain.\u200e<\/p>\n<p dir=\"ltr\">I used sprouted chickpeas which I boiled, however, soaked and cooked, frozen or \u200ecanned chickpeas can also be used.\u200e<\/p>\n<p dir=\"ltr\"><a href=\"http:\/\/hbne.co.il\/wp-content\/uploads\/2016\/05\/AIDS.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2879 aligncenter\" src=\"http:\/\/hbne.co.il\/wp-content\/uploads\/2016\/05\/AIDS.jpg\" alt=\"AIDS\" width=\"716\" height=\"537\" srcset=\"https:\/\/hbne.co.il\/wp-content\/uploads\/2016\/05\/AIDS.jpg 716w, https:\/\/hbne.co.il\/wp-content\/uploads\/2016\/05\/AIDS-300x225.jpg 300w\" sizes=\"auto, (max-width: 716px) 100vw, 716px\" \/><\/a><\/p>\n<blockquote>\n<p dir=\"ltr\">The ingredients (more or less) for the salad are listed here. Use the <a href=\"http:\/\/hbne.co.il\/?p=2181\" target=\"_blank\" rel=\"noopener noreferrer\">science of taste<\/a> \u200eand to discover your optimum flavor.<\/p>\n<p dir=\"ltr\"><strong>Vegetables<\/strong><\/p>\n<p dir=\"ltr\">\u200f1\u200fgrated medium cauliflower<br \/>\n\u200e1-2 bunches of asparagus\u200e<br \/>\n\u200e1 c (sprouted) cooked chickpeas<br \/>\n\u200e2 c cooked quinoa\u200e<\/p>\n<p dir=\"ltr\"><strong>Dressing<\/strong><\/p>\n<p dir=\"ltr\">\u200f\u200f1\u200flemon, juice and zest<br \/>\n\u200e3 T whole sprouted tahini (any tahini will do)\u200e<br \/>\n\u200e2 T zatar spice (a Mediterranean spice mixture)\u200e<br \/>\n\u200e3 t salt\u200e<br \/>\n\u200e1 t honey\u200e<br \/>\n\u200e1 t mustard<br \/>\n\u200e\u00bd t chopped dried zatar (or oregano)\u200e<br \/>\n\u200e1 chopped stalk of green onion<br \/>\nCold water \u2013 add until the desired consistency is reached.\u200e<\/p>\n<p dir=\"ltr\"><strong>Garnish<\/strong><\/p>\n<p dir=\"ltr\">I garnished with walnuts right before serving. Sunflower or pumpkins seeds or any \u200eother nut would work great.\u200e<\/p>\n<\/blockquote>\n<p dir=\"ltr\">It is not an exact science, I\u2019ve said it before. Feel free to change ingredient amounts \u200eand even add in more (or less).
